We serve our salads in real bowls

salad_outsideA huge pet peeve of mine is how most fast food salad shops do not actually give you a real bowl with your salad.  This is so annoying.  There is something that makes a salad taste better when it is served out of a nice piece of dinnerware.  With that in mind, we searched high and low for the perfect salad ‘bowl’ to use here at Modmarket.  The one we ended up with is a lovely, white, Asian inspired shape that looks great filled with leafy greens.  The only downfall to it is that our side salads and our regular size appear to be the same size when placed in this bowl.  I think we are going to eventually order a smaller version of it for use in side salads but we have not gotten around to it yet.

All hail Boylan’s Cane Soda on tap

boylans_2I hate high fructose corn syrup.  There are many reasons for this, though the main ones are I think it tastes bad and it really messes with your blood sugar regulation systems.  When we started Modmarket, I vowed to not have any HFCS in the restaurant.  Ever.  This proved to be easier in principle rather than practice but we managed.  Finding a fountain drink that didn’t contain HFCS and didn’t taste terrible was probably the hardest problem to solve.  Luckily, the good folks at Boylan’s helped us out.  They have been making soda sweetened with cane sugar since about the dawn of time (1891) and while they offer fountain soda on the east coast, they didn’t have a presence anywhere west of Kansas City.  After pleading our case, we convinced them to freight us a bunch of syrup to use in our restaurant and have been enjoying AMAZING HFCS free soda ever since.  Their Root Beef and Ginger Ale flavors are ridiculously good.  I have actually been shocked at how many people have noticed and loved the fact that we have this offering instead of the usual Coke or Pepsi flavors.  From a business standpoint, I would LOVE to have Coke or Pepsi.  It is cheap as dirt AND they give you the machine to serve it out of.  What really chaps my bum is that both company’s make their sodas with cane sugar for foreign markets but you cannot get it in the US.  Oh well, at least there are awesome companies like Boylan’s who can provide a ‘sweet’ alternative!

It’s like pizza, only better

mrita For years, I have wanted pizza that had a tasty crust, wasn’t sloppy like a wet noodle, wasn’t greasy and had really interesting toppings.  I only had to invent a new restaurant concept to find what I wanted.  Our flatbreads are basically my dream pizza.  Take the cheese.  A lot of places think a good slice of pizza is a result of a large amount of cheese.  We think the opposite.  We don’t use a lot of cheese, but the cheeses we do use (like Haystack Chevre) are the best we could find.  A little bit of high quality cheese goes a looooooong way.

Changing expectations…

We will go ahead and warn you now, we are not going to be like every other restaurant.  modmarket is our little test lab for tons of interesting ideas on how to make fast food more modern, more interesting and more sustainable.

Our menu is pretty simple — flatbreads, salads, some baked goods and good, cheap wine.  We have been prototyping these foods in our kitchens for quite some time now and we are excited to begin serving them to ‘paying’ customers in the near future and getting feedback on our creations (the skinny so far is that they are extremely tasty).   This blog will serve as a little porthole into our company and let you follow along as we build a company that thinks about fast food a little differently than you would expect….
