Daily Camera Luv

Once again, shocked by the response.  I think EVERYONE in Boulder reads the Camera.  Pretty neat to see that people go to places other than cnn.com to find out what’s going on in the world (or their community)

Prototyping a Restaurant

My background is not in restaurants.  It is in design.  Whenever I design anything, I like to prototype.  Make a rough version, try it, gather feedback, tweak it, repeat.  This is how you end up with a product design that completely kicks butt.  Designing Modmarket is no different, the exception being the scale of the product!  Since we opened two weeks ago we have been constantly tweaking things left and right trying to make mM be the best fast food joint in the land (or at least in Boulder).  Our customers have been AWESOME about giving us great feedback, a lot of which has already resulted in changed offerings and or store operations.  Here are just a few things that we are either working on, have change or are going to change based on feedback we have received.

  • vegan cheese – we now offer vegan cheese on our flatbreads and are also selling small logs on it.  A customer recommended we use Teese vegan cheese, which is not sold in Boulder.  So we ordered a bunch of it and even got some small logs to retail to local vegans who want to take some home with them
  • soups – EVERYBODY keeps asking about this.  Don’t worry, we are on it, should be ready next week (if the bowls arrive on time)
  • kids menu – about a week out, we are going to have some Horizon Organic Milks, a special kids menu (the salad one allows parents to select a few key veggies that they know the little ones will like and places them in hand friendly containers)
  • lemons and limes – we thought about this one, forgot to do it once we opened and had a customer remind us that we needed it.  lemons are now available all the time at the beverage counter and limes will soon join them
  • smaller to go boxes – taking a few pieces of flatbread in a big box is a waste and everyone hates aluminum foil.  we now have small, sugar cane based take out boxes
  • smaller side salads – new bowls coming for side salads which will make sure they are all ‘side’ sized
  • salt and pepper – we started out only having to go packets for salt and pepper.  everyone seemed to hate that.  we now have very chic salt and pepper grinders.  check them out by the beverage counter next time you are in
  • combo meals – still working on it, but within a few weeks, combo meals will be a reality.  should be a pretty good deal.
  • oregano – we are morons.  we should have had this from day one for people to put on flatbread.  it will be here by Friday
  • gluten free beer – we should have it by the beginning of next week. it tastes shockingly good.
  • more dressing – a lot of people thought our dressing was bland.  we think that was because we were going way to light on them for the first two weeks.  now we put on a little more and ask everyone is that enough.  trust us, our dressings are ANYTHING but bland.  if you have the right amount, you will definitely taste it!

Vegan Cheese Now At Modmarket

photo(21)We have been open for two weeks and I have been blown away by the number of people who have asked for a vegan and or dairy free cheese option. We searched far and wide and had no luck in finding a cheese that we liked. Luckily for us, a customer emailed us out the blue and told us to try Teese cheese, made by a small company near chicago. This stuff RULES. It melts like normal cheese and tastes great. I think all the vegan and lactose intolerant folks in Boulder are going to be really psyched when they try it.

Yelping Us To Improve

You may have noticed that all reviews from Yelp! show up on the side bar of our website.  We got a pretty rough review today and a few people emailed me and asked why we don’t take down the sidebar so customers don’t see it.  My response was that customers should see it.  Whoever wrote the review made a good point and we immediately went to work on trying to fix the problem (in this case, we gave someone a ridiculously small amount of tofu on their salad).  If it were not for this review, we would have not known about this problem and would not have been able to try and fix it.  Hopefully, as we stay open longer (can’t believe it has only been 2 weeks), we will keep identifying problems and fixing them until we have things humming along like a greased wheel.  In the interim, being as transparent as possible will hopefully let customers know that we are serious about evolving our concept to be the best restaurant it can be!

We Love Chipotle!

We made it into the paper today with an article regarding our Chipotle sign.  We just wanted to reiterate that we LOVE CHIPOTLE.  We think their food is fantastic, their sourcing practices are a model for businesses of ALL TYPES to follow and we hope they don’t stay ‘miffed’ at us for too long!

Modmarket in the Daily Camera

The Daily Camera, Boulder’s local paper, mentioned Modmarket in a nice little writeup last week.  You can view it here.  I have been amazed at how many people have come into the store b/c they saw the article.  Print media is definitely alive and well in Boulder!

Kids Love Modmarket

kids True story.  When we were trying to raise capital to open Modmarket, we had multiple prospective investors tell us that kids would not like our whole wheat dough and salads.  Our contention was that kids love pizza, and kids love hand food and that they would really enjoy chowing down on the healthy eats served at mM.  Since we opened a week ago, we have had a TON of families with kids come into the store and overwhelmingly, our foods have been a hit, especially the M’Rita flatbreads.  Turns out kids LOVE healthy food, especially when it tastes good :-0  We also got some great feedback on a kids menu which will be launching this week (assuming I get some time to lay it out and get it printed!) Week One A Success!

photo(17)Wow.  Time flies when you are having fun (or at least working 18 hours a day).  I can’t believe it has been one week since we opened our doors to the public.  In that week, we have served a lot more customers than we thought we would have, have tweaked our water temperature in our dough to make a more consistent and slightly fluffier crust (everyone agrees it is better), have watched our staff improve rapidly at all job functions, ran out of root beer and ginger (more…)

Chipotle needs to get a sense of humor

We love Chipotle.  I have eaten there no less than a thousand times in my life.  Modmarket is located about 50 feet away from a very busy Chipotle.  So busy in fact, that at lunch time, people park in front of our store and walk over to get their burrito.  Pre Modmarket, Chipotle was the only good option for quick food in the part of the 29th St Mall that we are located  in.  We created what we thought was a pretty funny sign.  Chipotle was NOT amused.  They actually (more…)
