Learn how to make basil aoili (and a breakfast sandwich)

So this morning, I was invited to go on the Fox 31 (a local Fox affiliate here in Denver) and demonstrate how to make a healthy breakfast sandwich. Figured this would be a good topic to cover for people looking to start their New Year out with an interesting breakfast idea. The segment is below, watch it and let us know your thoughts. The sandwich we made was our Rocket Egg, which contains arugula (known as rocket in all other cultures), tomato, egg, cheese and a basil aoili. I like to think of the Rocket as the modern version of the bacon, egg and cheese. The segment was short so I wasn’t able to go into too much detail on the aoili, but the simple way to make at home is use the following recipe:

- two egg yolks
- 1 tbsp red wine vinegar
- 4 cloves of garlic
- big handful of fresh basil leaves
- pinch of salt
- pinch of pepper
- 1 cup of canola/olive oil blend (i like 80/20 ratio)

Add everything except the oil to a food processor or blender. Pulse till the basil is nicely chopped. Then with blender running, SLOWLY add in the oil till it thickens up quite nicely. Toss in the fridge for an hour till it sets up and you are good to go. Works well on just about any type of sandwich. A bit random, however, a local developer talked about the vegetarian offerings of our Glendale store on their blog. All press is good press :-)

New Yelp Review

Solid Yelp Review just posted for the Glendale Store, hat tip to our manager and crew down there, they are doing a great job!

First and foremost, I really appreciate gluten-free vegetarian dining options in this area. I’ve tried a few of their salads and a couple pizzas – but ever since I got the Goat pizza, I haven’t been able to order anything else, so good. The food isn’t really mind-blowing but it’s tasty and that paired with mostly local organic ingredients and glutard love gets 5 stars from me! Also love the beetle-kill pine panels and happy hour wine specials.

Modmarket Soup in 5280 Magazine

Well this is cool. Rob was reading 5280 Magazine last evening and saw an article on great soups in the Denver area. While reading the first restaurant mentioned, he though, ‘wow, wouldn’t it be cool if Modmarket was in this article’.  When he got to the next heading, he realized we were!
