When we laid out the plan for modmarket, one of the things we were passionate about was serving grass fed beef. Admittedly, I am not a big meat eater, but I do enjoy high quality steak every now and again and I have often wrestled with the sustainability of those choices. It is no secret that the US meat industry is not sustainable in its current format. I will not delve into the details of this (if you want more info, go see Food Inc or read this) but I will say that pasture raised, grass fed beef is in our opinion the best way to both satisfy one’s meat cravings and help the environment. We have been shocked, however, at the difficulty in not only sourcing the product, but even just getting distributors to SELL us the product they have access to.
They all claim that customers will not like it because it is not marbled enough (read: fatty) and that it is too gamey tasting. Turns out that everyone who has tried our grass fed tri tip and flanks LOVES it. And when you explain to them the health and eco-benefits of it, they seem to enjoy it even more. It is definitely more expensive, but we are not serving people 2lb steaks so it works out pretty well for us. I think if more people focused on eating a little less of certain types of food but sought out higher quality varieties their grocery bill would stay about the same and their waist lines would shrink…..but I digress.
