So this is interesting, the Daily Camera is reporting that Trader Joe’s is coming to Boulder. And the rumor mill claims they are coming to the 29th Street Mall, home of Modmarket. We would love having our favorite grocery chain as a neighbor, though, we hope they are far enough away that the billion or so people flocking there every weekend leave enough parking for the rest of us!

The hardest thing about our operation is cutting all of the fresh veggies and fruits that are used in our salads, sandwiches, and pizzas. When we opened it wasn’t that big of a deal, but as we have grown food prep has become a full time job (sometimes a couple full time jobs). We have had some very skilled prep folk up to this point (Andreas can cut lettuce faster than anyone I have ever seen) but our volume has gotten to the point that we could no longer keep up with the demand. We could be like most other fast food restaurants and order pre-cut produce from our distributors that is doused in preservatives, but we would never do that. Instead, we purchased a CL50 food processor from Robot Coupe. This thing is a beast. We have a bunch of ‘wheels’ that go inside it and allow it to rapidly prep whatever we can force down its ‘throat’. It is so fast that usually cleaning the machine post prep takes longer than the prepping itself. Watching how ’efficient’ this machine is at cutting things reminds me of one of my favorite childhood cartoons – the story of Paul Bunyan vs. the chainsaw. A skilled prep person is Paul, great at what they do but no match for the machine

My All Time Favorite Scam

Being an owner of a small business means that you get inundated with scam offers. I probably get 3 per week. My favorite though are these guys. They fax us at least twice a month telling us Modmarket won a 4 star customer rating. It never says who or what bestowed this honor on us, just that we were awarded it. There is no affiliation with any established media firm, or any reason given for how we received “4 stars.” They also tell us that our business could benefit by telling all of our customers about the award we ‘won’. And guess what, they will help us do that by selling us a plaque celebrating our ‘award’ for $195.00 dollars. And for the bargain basement price of $225, they will throw in a boilerplate press release, a window sticker and a jpg image of the award. This company must have people signing up for this offer or I wouldn’t keep getting the faxes. The fact that there are business owners who would actually pay for this is a great example of why so many small businesses fail.
Jess and Dave are Rockstars

Meet Jess and Dave. They are currently engaged to be married in 26 days. And they are both ROCKSTARS. Jess manages all of our catering and out of store events. If you have ever ordered sandwiches for 80 people, like someone did last weekend, you probably have talked to her. Her and Dave now manage our Farmer’s Market Booth. Rob and I still help out at times, but Jess and is way more organized than we ever were so we have passed the management torch onto her. Today, we had a Farmer’s Market staffer call out at the 11th hour (literally, they left a message on Jess’s phone at 11pm). Rather than call me to come help them in the morning they decided to run the booth with two people. For those of you who have not been to our booth, we sell a lot of food. And a lot of that food is gourmet egg sandwiches which are tough to make with only one person (Dave) cooking everything. Most booths have at least four people. They managed to run our booth today with just two people. That is amazing. Rob and I had one day where we were the only people working the booth and we got slammed. That was the hardest 15 minutes I have worked since opening Modmarket. They cranked the booth all day a Saturday with just the two of them. Jess and Dave, we salute you. It is people like you that make Modmarket an awesome little company.
