5280 thinks transparency is as cool as we do

Amanda Faison over at local Denver mag 5280 made a nice blog post about our Denver restaurant opening up.  She’s happy that we’re down in Denver now and so are we.


For anyone trying to stick to an eat-healthy resolution, take note: Modmarket, a fast-casual joint serving good-for-you eats, has opened its first location in Denver. If that sounds like a yawner, you’ve simply got to experience Modmarket’s super-fresh, delicious menu, which changes seasonally (order the heavenly cashew-butternut-squash soup before it disappears until next fall).

My staples include the fig pizza—a mix of cheeses, arugula, and figs on a thin, whole-grain crust—and the crunchy Mongolian salad with greens, red cabbage, soy nuts, scallions, edamame, and wontons with a slightly spicy, orange-mint-chile dressing. The bonus: This is affordable, real food—no artificial sweeteners, no additives—with prices running from $4 to $10.50.

I became a Modmarket convert when I dined at the original location in Boulder, and I’m thrilled that Denver now has one to call its own.

Extra: Owners Rob McColgan and Anthony Pigliacampo are all about transparency, hence the open kitchen and the nutritional information for your order printed on your receipt.

A blurb in The Washington Park Profile

The Washingon Park Profile gave us a nice little blurb , quoting our philosophy about our food, “When you eat these types of foods, you feel better an hour later, not worse.”


Up the block at 1000 S. Colorado Blvd., Boulder’s Modmarket, serving “fast foods that are good for you,” is set to open its first Denver location next to Pinkberry, Tokyo Joe’s and Barnes & Noble.

Modmarket offers up a tasty menu of hand-crafted brick oven pizzas (including gluten-free options), crisp salads, gourmet sandwiches and homemade soups made from absolutely fresh ingredients (whole grain flour, raw vegetables, fruits, legumes … you get the idea) with your health in mind. Their prime directive is: “When you eat these types of foods, you feel better an hour later, not worse.”

Eat free at a healthy, delicious restaurant while giving back!

Modmarket, a restaurant company that serves fast foods that are good for you, is opening its second location at 1000 South Colorado Boulevard in Denver next week. They will be offering free food days for their soft opening on Monday 1/10 from 5-8 p.m. and Tuesday 1/11 from noon-8 p.m. with a donation. 100% of the donations will go back to LiveWell Colorado, a nonprofit organization committed to reducing obesity in Colorado by promoting healthy eating. Boots Gifford gave us a nice write-up in The Denver Business Journal regarding the opening of the Denver Store.  In it, we delve into some future plans for mM and why we started the restaurant in the first place.  Here’s a choice quote by Rob which I think sums up the new restaurant nicely: “We design our restaurants with a modern and natural feel. If you’re looking for ways to keep that New Year’s resolution about a healthier lifestyle, Modmarket offers you a fast-food alternative.

The restaurant company serving “fast foods that are good for you” opens its second location at 1000 South Colorado Boulevard on Jan. 10.

“We strive to bring the latest innovations into our restaurants, said Rob McColgan, co-owner of Modmarket, in a statement. “We design our restaurants with a modern and natural feel. The use of an open kitchen creates a comfortable environment that highlights the fresh ingredients used, rather than hiding them in the back of the house. Sustainable materials and natural daylight produce a unique environment that is enjoyable to dine in.”

A seasonal menu offers salads, such as the wintergreen salad with mixed greens, goat cheese, apple, roasted potato, walnuts and honey herb vinaigrette; sandwiches, such as pesto chicken with herb roasted chicken breast, provolone, lettuce, tomato and basil pesto; soups, such as cashew butternut; and brick-oven pizzas, such as the Pom with balsamic pomegranate glaze, chicken, fresh mozzarella, Parmesan, red onion and portobello mushrooms.

Cooking with “real foods,” Modmarket uses raw produce, whole grains and humanely raised, natural meats.

“After years of research and testing food choices in various states, we knew Colorado would be a great market to launch in because of its health and sustainable practices and population,” said co-owner Anthony Pigliacampo, in a statement.

“We knew that if we succeeded with our vision of creating cravable, affordable, gourmet fast-casual food that is sustainable for your health as well as the environment, we would be able to be successful in many locations. We look at Colorado as the first of many states for Modmarket.”

McColgan and Pigliacampo opened their first location in Boulder in 2009. The new Glendale location is next to Barnes & Noble, Pinkberry and Tokyo Joe’s. It is open Sunday through Thursday, 11 a.m. to 9 p.m. and Friday and Saturday, 11 a.m. to 10 p.m.

The Daily Camera, Boulder’s local paper, mentioned Modmarket in a nice little writeup last week.  You can view it here.  I have been amazed at how many people have come into the store b/c they saw the article.  Print media is definitely alive and well in Boulder!
